Juliette's porridge recipe

 

I've never been able to eat breakfast in the morning.
As a child, it was a daily struggle for my parents to get me to swallow a bowl of cereal or a glass of milk. When I was older, I always had a good excuse: not hungry, too fast, allergic to the smell of steaming coffee... But as I got older (and more mature), I realized that I'd never last more than 15 days on a diet without a real meal in the morning, and that it was clearly heresy to make such an effort to eat healthily while skipping this fundamental meal.

So I got hooked on the bowls of muesli and other porridges that were invading my Instagram and Pinterest accounts, and quickly became addicted. It's hearty (yes, I've even converted my boyfriend!), varied (you can put any fruit you like, depending on the season), and I must admit I can't live without it...

Almond milk porridge (1 person)

  • 3 to 4 tablespoons rolled oats

  • 100 ml almond milk

  • 2 teaspoons cinnamon

  • fruit.

Cook the almond milk over a low heat for 5 minutes,
cinnamon and rolled oats: the porridge is ready when the oats have completely absorbed the milk.

Add the fruit (personally, I use raspberries and blueberries, which can also be found in frozen versions) and possibly a few dried fruits (like raisins for extra sweetness).

If you have a little more time, you can serve this porridge on a homemade apple count (2 apples, peeled and cut into pieces, a little water and cinnamon, to cook over a low heat for 30 min), it's delicious.

Bircher Muesli (1 person)

  • 3 tablespoons rolled oats

  • 150 ml almond milk

  • 1 tablespoon chia seeds

  • a teaspoon of honey (or maple syrup)

  • a pinch of cinnamon

  • fruit.

Mix the oats, almond milk, chia seeds and honey in a bowl and leave overnight in the fridge.
In the morning, sprinkle with cinnamon, and add fruit pieces (I use banana/raspberry or banana/apple) and dried fruit or oilseeds (I usually add raisins and hazelnuts).

PS for those in a hurry: personally, I take these breakfasts with me in a Le Parfait jar to eat when I get to the office.
